Winery buildings look the way they do for reasons that predate any architect. Two physical constraints, gravity and thermal mass, account for most of the layout.

Pumping damages wine mechanically

Moving wine through a pump subjects it to shear forces and introduces oxygen at the impeller. Both can coarsen texture in delicate wines, and neither is fully avoidable once a pump is in the line.

The effect is small for a robust young red and significant for a fragile older wine or a lightly handled white. Repeated transfers compound it, since every movement adds another exposure.

Avoiding pumps entirely is therefore a stylistic goal in cellars aiming at gentle handling. Gravity is the only alternative, and it has to be designed into the building rather than added later.

Gravity flow dictates a vertical plan

A gravity-fed winery receives fruit at the top level, ferments a level below and ages at the bottom, with each transfer happening by falling.

This requires either a multi-storey building or a site with enough slope to bury the lower levels into the hillside.

Building into a slope achieves both aims at once, which is why so many cellars appear to be half-underground when approached from the road.

Buried cellars regulate their own temperature

Soil and rock hold temperature very stably, and a few metres of depth flattens out seasonal swings almost completely. Ground at that depth sits near the local annual average rather than following the weather.

A buried cellar therefore holds a steady cool temperature year-round with no refrigeration and no running cost. The thermal mass of the surrounding rock does the work continuously.

Humidity stays high underground as well, which reduces evaporation through barrel staves and corks. Above-ground cellars need active humidification to match it.

Harvest logistics shape the working floor

Fruit arrives in a compressed few weeks, and the receiving area has to absorb a volume of traffic the rest of the building never sees.

Sorting tables, destemmers and presses cluster near the entry point because moving fruit is far more awkward than moving liquid.

Drainage dominates the design of these floors, since crush pads are washed constantly and standing water breeds spoilage organisms.

The visitor areas came last

Tasting rooms and hospitality spaces are recent additions to a building type that spent centuries being purely functional.

They are typically placed where they interfere least with production, often at the top of the slope where the road already arrives.

Where a modern winery looks like a piece of architecture rather than a shed, the visible portion is usually the hospitality half. The working cellar remains buried behind it.
