Red wine ferments with its skins in the vessel, and those skins float. Managing the resulting cap is the most physically demanding part of a harvest and the one with the largest effect on style.
The cap forms because gas lifts the skins
Yeast converting sugar releases carbon dioxide, which attaches to the skins and carries them upwards. Within a day they form a dense layer at the surface.
Colour, tannin and aromatic compounds all sit in those skins rather than in the juice. A cap left alone means the extractable material is sitting out of contact with the liquid.
The cap also dries and heats, and a dry cap is vulnerable to spoilage organisms. Breaking it up is a hygiene measure as much as an extraction one.
Punching down is the gentler option
Punching down pushes the cap physically back into the liquid, traditionally with a plunger and now often mechanically from above.
The action submerges the skins without shearing them, which suits thin-skinned varieties where aggressive handling produces bitterness.
Frequency is the control. Two brief punch-downs a day gives a restrained extraction, while five gives a much denser wine from identical fruit.
Pumping over circulates rather than submerges
Pumping over draws liquid from the bottom of the tank and sprays it across the top of the cap, letting it percolate back through.
This adds oxygen, which fermenting yeast needs, and it homogenises temperature through a vessel that would otherwise stratify sharply.
It is also the practical method in large tanks where a cap may be too deep and heavy to punch down safely by hand.
Temperature is the hidden variable
Fermentation generates substantial heat, and the cap insulates it. The centre of an unmanaged tank can run far hotter than the liquid beneath.
Higher temperatures extract more tannin and colour but drive off delicate aromatics, so the same cap management at two temperatures produces very different wines.
Cap operations therefore serve double duty as cooling, and many cellars schedule them by tank temperature rather than by the clock.
The alternatives and what they signal
Some producers submerge the cap permanently under a grid, producing a slow, passive extraction with minimal handling.
Others rack the liquid off entirely and pour it back over the skins, a more forceful method that aerates strongly and is used sparingly.
Reading a technical sheet, these choices tell more about intended style than the grape variety does. They are where the winemaker's hand is most visible.
