Acidity is the element that most reliably separates a wine that holds attention from one that does not. It is also the component tasters describe least precisely.
What the acids actually are
Grapes contribute mainly tartaric and malic acid, and the balance between them is set in the vineyard by climate and ripeness. Tartaric is the stable one, and malic the fragile one.
Cooler sites retain more acid because the vine metabolises it more slowly during ripening. Warmer sites lose it quickly in the final weeks, which is why hot-climate wines frequently need adjustment in the cellar.
Lactic acid appears later if a winemaker allows a secondary conversion in the cellar. It is softer and rounder than the malic acid it replaces, and the change is audible in the texture rather than the flavour.
Acidity is measured two different ways
Total acidity counts how much acid is present, while pH describes how strongly that acid is dissociated and therefore how sharp it acts.
The two do not always move together, which is why a wine can test high in acid and still taste soft, or the reverse.
pH also governs microbial stability and colour, so a winemaker watches it for reasons that have nothing to do with how the wine tastes.
The sensation is salivation
Acid triggers saliva production, which is why a high-acid wine makes the mouth water and leaves a clean feeling behind.
That physical response is easier to notice than the sourness itself, and it is a more reliable guide when comparing two wines side by side.
Wines lacking acidity feel heavy and short, a quality traditionally described as flabby. The fruit may be present but nothing carries it forward.
Sugar and acid are read together
Sweetness and acidity mask one another, so a wine with noticeable residual sugar can taste dry if the acidity is high enough.
Many sparkling wines contain more sugar than drinkers assume, and the sharp acidity conceals it entirely.
This is also why sweet wines from cool regions stay refreshing while sweet wines from warm ones can feel syrupy at the same sugar level.
Why it governs pairing
Acidity cuts fat and resets the palate, which is the reason crisp whites sit alongside rich dishes so effectively.
It also has to compete with acid in the food itself. A wine less acidic than the dressing on a salad will taste dull and metallic beside it.
The working rule that follows is simple to apply: the wine should be at least as acidic as what it accompanies, or it loses the exchange.
