A vine with permanently available water grows vigorously and produces dilute fruit, while one that dries out completely shuts down and stops ripening.
Good drainage combined with some moisture retention at depth produces mild, controlled water stress, which is the condition that concentrates fruit without stalling the vine.

In marginal climates the best sites face towards the sun and sit at an angle that presents the ground more directly to it.
